Vegetarian Hash Brown Casserole (Vegetarian)




Ingredients

1 1/2 packages of Simply Potatoes  Southwest Style Hashbrowns

8 ounces of sour cream

1 can cream of mushroom soup

1/2 cup of melted butter

1/2 cup chopped onion

3 cloves of garlic, minced or pressed

2 cups of shredded cheddar cheese

1 tsp salt

1/2 tsp pepper

2 cups of crushed cornflakes (cereal)

1/4 cup melted butter

Directions:

Preheat oven to 350 degrees.

Melt 1/2 butter in microwave oven or stove top.

In a large bowl combine hash browns, 1/2 cup melted butter, cream of mushroom soup, sour cream, chopped onions, cheese and salt and pepper.

Spoon mixture into a 3 quart casserole dish

In a skillet over medium heat, saute crushed cornflakes in 1/4 melted butter.  Sprinkle over the top of the casserole and bake covered for 40 minutes.


This is not a healthy recipe by any stretch of the imagination, but it is a crowd pleaser and it has been adjusted to suit a vegetarian diet.
